Tom's Summer Gazpacho
So good, we only started making this Summer and now I can't live without. Crave all day. It's so refreshing and helps beat the heat!
Ingredients:
Make sure they're farm fresh if you can- we picked up some produce from local farm stand and tasted so much better than store bought!
3 Tomatoes (seeded) (about 2 pounds)
Red Onion (quarter)
1 Red Pepper (seeded and deveined)
1 Cucumber (seeded and peeled)
Fresh Cilantro (chopped)
Tabasco
Sea Salt
Black Pepper
Apple Cider Vinegar (1 tablespoon)
Blend in cusinart and chill in fridge before serving!
Voila!
Makes enough to eat twice!

Only yesterday I told my husband how I was missing my mom's summer gazpacho soup. I have been craving it for ages. I will try this recipe then. Sounds wonderful!Thank you:)
Oh, yummy! The tomatoes are arriving fresh every day now at the market in town. I should give this recipe a try. :))
